Whipped Vanilla Icing

  • 6 tablespoons all-purpose flour

  • 2 cups milk

  • 2 cups (4 sticks) unsalted butter, room temperature

  • 2 cups sugar

  • 2 teaspoons vanilla extract

  1. In a medium-size saucepan, whisk the flour into the milk until smooth. Place over medium high heat and cook, stirring constantly until very thick and bubbly, making a roux.

  2. Remove from the heat and transfer to a glass or metal  heatproof  bowl.  Place a piece of parchment paper or plastic wrap directly on the surface. Cool to room temperature before placing in the refrigerator. Chill for at least an hour.  Can be made ahead up to 2 days.

  3. To make the icing, remove the roux from the refrigerator and bring it to room temperature for about 30 minutes. In the bowl of the electric mixer with the paddle attachment beat the butter on medium speed for 3 minutes, until smooth and creamy. Gradually add the sugar in ½ cup increments, scraping down the sides and bottom of the bowl occasionally, until all the sugar has been incorporated beating continuously for 3 minutes until creamy and light in color. Add the vanilla and beat well.

  4. Add the cooled milk mixture. Beat on the low speed for 10-15 minutes, until very smooth and white in color. Scraping down the sides and bottom of the bowl occasionally.

  5. Cover and refrigerate for 15 minutes (no less and no longer – set a timer!)
